GRAPE VARIETY: 100% Albariño
HARVEST: Harvest began on 23 September, with very ripe berries and a good balance between acidity, extract and sugar content. The grapes were picked manually.
WINEMAKING: Grapes selected from the best vineyards in the Val do Salnés area, that were picked by hand and transported in small plastic crates. Hand sorting of the bunches of grapes. After a cold maceration, only the free-run juice is fermented after natural cold clarification under controlled temperature to keep all its crispyness and aromas. Once fermentation occurs, the wine is bottled in small batches to guarantee its characteristic freshness.
TASTING NOTE: Pale straw yellow with greenish hints. Tipically albariño notes such as citric fruits such as grapefruits appear on the nose with a subtle background of apple skin. In the mouth it is rich, fresh and fruity with a touch of saltines and eucaliptus . It shows an excellent acidity a fine complexity and a very well balanced finish.
SERVING AND PAIRING: Ideal serving temperature between 8 °C (46,4 °F) and 10 °C (50 °F) (when the blue galleon appears on the Label). A marvellous companion to blue and white fish dishes, scallops and any type of seafood.
